Wild Salmon Vegetable Salad with Miso Dressing

Wild Salmon Vegetable Salad with Miso Dressing
Two 5 oz filets of Salmon
1 small lemon
2 tsp extra virgin olive oil
4 Cups baby romaine or mixed baby greens
1 Cup Napa Cabbage, shredded
2 Green Onions
1 Carrot shaved
1 Cucumber sliced

Lemon Miso Dressing
2 TBSP Honey (I use sugar free)
2 tsp fresh ginger grated
1 Lemon, use flesh and juice
2 TBSP White Miso
1/3 Cup extra virgin olive oil

Drizzle Salmon with 2 tsp olive oil and season with sea salt and pepper. Preheat oven to 250 degrees, cook salmon 25-30 mins. After its cooked, break it in to pieces to spread over salad.
Combine lettuce and remaining salad ingredients, top with the salmon. After mixing the Miso dressing, top the salad.
