Shrimp with Avocado Mango Salsa.

8 Cups baby spinach
1 Cup Couscous
1 LB Medium Shrimp cleaned and deveined
1/2 Cup chopped cilantro
1 TBSP extra virgin olive oil
1 Large Mango
1 Avocado
1 Medium Tomato
1/4 Cup Red Onion chopped
1/2 Jalape├▒o chopped
1 TBSP Lime Juice
Heat grill. Fold 4 18″ long pieces of foil in half, unfold and spray inside with cooking spray.
Place 2 cups spinach in center of each foil packet. Combine couscous and 1/4 cup of water, divide evenly among packets place on top of spinach. Combine shrimp, cilantro 1/2 tsp salt and olive oil in a bowl. Divide shrimp mixture evenly and place in foil next to couscous. Seal foil by crimping edges but leave room for expansion. Cook for about 10 minutes, until couscous is fluffy and cooked. Mix the remaining ingredients together to make the salsa. Mix together and serve.
