Bean and Tomato Salad

1 small onion
1 cup cooked or canned (drained and washed) white beans
1 cup fresh or frozen green beans
1 cup cherry tomatoes
2 TBSP fresh parsley

Dressing
1 tsp mustard
1 TBSP white wine vinegar
2 TBSP olive oil
Salt and Pepper to taste
pinch of stevia
Heat oil in a medium skillet, add onion and cook until soft. Add green beans and a little water if necessary, season with salt and pepper. Add the cooked or canned beans and cherry tomatoes. Mix and serve.
